Eggs are the binding agent, the leavener, and the structure in keto baking — they're doing the work that gluten normally handles. When a recipe calls for a flax egg, I use 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, rested for 5 minutes. It works, but it's slower to set and won't give you the same lift.
