Keto Egg Recipes for Every Meal of the Day
Eggs are the foundation of keto cooking. They’re in my chaffles, my baked goods, my breakfast scrambles, and half my dinners. I go through about 3 dozen a week.
Beyond breakfast, eggs are what hold keto baking together. Without gluten, we rely on eggs for structure and lift. I always use large eggs at room temperature — cold eggs don’t whip as well and can seize melted chocolate.
From chaffles to custards, quiches, and egg-based breading — these recipes show how essential eggs are on keto.

Eggs are the binding agent, the leavener, and the structure in keto baking — they're doing the work that gluten normally handles. When a recipe calls for a flax egg, I use 1 tablespoon of ground flaxseed mixed with 3 tablespoons of water, rested for 5 minutes. It works, but it's slower to set and won't give you the same lift.
