I make this keto taco casserole almost every week during busy stretches. The whole thing comes together in one skillet before a quick bake, and it feeds my family of four with leftovers. Seasoned ground beef, zucchini, cauliflower rice, Rotel, and a thick layer of melted Colby jack. No eggs, no filler, just taco flavor that actually tastes like taco night.

I tested egg-based versions early on because most casserole recipes call for a binder. The egg gave the whole dish this subtle breakfast quality that didn’t belong. Once I dropped it, the beef and veggie flavors came through clean, and the filling holds together fine on its own once you drain the liquid before baking. That decision changed everything about how this recipe eats.

The biggest lesson from making this dozens of times: control the moisture. Salt your diced zucchini for about 10 minutes, then squeeze it dry before it goes in the skillet. Use a slotted spoon to transfer the filling to the casserole dish so the cooking liquid stays behind. Squeezing the cauliflower rice dry first gets the same result. Those small steps keep the bottom from getting soggy.

If you’d rather skip the extra dish, an oven-safe skillet works fine for the bake. Just pour off the liquid before adding cheese. I do this on nights when I don’t want to wash anything extra, and the edges get slightly more caramelized in cast iron, which I actually prefer.

Why I skip the egg

I tried the egg-binder approach that a lot of keto casserole recipes use, and it gave the whole thing a subtle breakfast quality I didn’t want. Taco filling shouldn’t taste like a frittata. Once I dropped the egg, the beef and veggie flavors came through clean, and the filling holds together fine without it.

Instead of just loading up on cheese and meat, I add zucchini and cauliflower rice for bulk. Both cook down in the Rotel liquid and absorb the seasoning, giving you extra fiber and volume without extra carbs. My kids eat this without knowing there are vegetables in it, which is the whole point.

How I like to serve it

I switch up the toppings depending on what’s in my fridge. Here’s what I reach for most:

Storage, freezing, and meal prep

Meal prep: I cook the ground beef mixture through the veggie step, let it cool, and store it covered in the casserole dish in the fridge for up to 2 days. When I’m ready, I add cheese on top and bake as directed. I usually prep my toppings at the same time (dice the green onions, chop cilantro, mix the sour cream sauce) so everything is grab-and-go.

Freezing: I freeze the cooked filling (without cheese or toppings) in an airtight container for up to 3 months. Thaw overnight in the fridge, transfer to a casserole dish, add cheese, and bake at 375 for 12-15 minutes until heated through. The texture holds up well. I wouldn’t freeze it with the sour cream sauce or chips on top.

Leftovers: Store in an airtight container in the fridge for up to 3 days. Pull the chips off before storing or they’ll turn soggy overnight. Reheat in the oven at 350 for 5-10 minutes or microwave for 1-2 minutes, then add fresh chips on top.

How to make it

Everything happens in one skillet, then you transfer to a baking dish (or keep it in the skillet if it's oven-safe). The whole process takes about 30 minutes from start to table.

Key ingredients and substitutions

  • Ground beef: I use 80/20 for this recipe. Ground turkey, chicken, or venison all work too.
  • Onion: Yellow onion has the lowest net carbs, but white works fine.
  • Oil: I use avocado oil. Light olive oil or ghee are good swaps.
  • Rotel: One can of Rotel, or use a can of diced tomatoes plus a small can of green chilis. Fresh green chilis work too; add them at the same time as the zucchini so they soften.
  • Zucchini: Medium, diced. Don't peel it. The skin softens during cooking and adds extra fiber.
  • Black olives: I like them, but skip these if they're not your thing.
  • Cauliflower rice: Fresh (pulse florets in a food processor), frozen from a bag, or pre-riced from the produce section. All work.
  • Cheese: I go with Colby jack. Monterey jack, cheddar, or a Mexican blend are all good. Mix in some cream cheese if you want it creamier.
  • Tortilla chips: Make your own or use store-bought like Quest Chips or Mr. Tortilla Chips.
  • Green onions: Use both the white and green parts.
  • Sour cream: Plain Greek yogurt works if you want to cut fat and calories.
  • Seasoning: Chili powder, oregano, salt, and garlic. Store-bought taco seasoning is a fast substitute.

    Preheat the oven to 375 degrees. In a skillet, add avocado oil and ground beef. Cook over medium high heat until almost browned.

    Lower heat to medium. Add Rotel, diced zucchini, olives and cauliflower rice. Cover and let simmer until cauliflower rice and zucchini have softened. Remove from heat.

    Top with shredded cheese and bake at 375 degrees for 10 minutes.

I’ve been making this every few weeks since spring. Switched from a slotted spoon to a colander for the draining step, and that one change was worth it. Couple minutes in the colander before you move it over and way more liquid comes out. The cheese layer actually sits flat. Zucchini’s the culprit, keeps releasing even after you pull it off the heat. I also run the bake to 15 minutes instead of 10, real crispy edges and the middle firms up. Five batches in and I’ve been topping mine with sour cream and sliced jalapeños straight out of the oven. Still making it in July even when the kitchen’s already hot.

If you’re transporting this, give it a few minutes uncovered before you foil it. Steam under the foil softens the cheese top. Worth protecting. I set it out at a birthday dinner last weekend next to some other casseroles. Someone asked me midway through the night what seasoning I used, assumed I had mixed something from a packet. The chili powder does more than a kit would, especially with the oregano in there. Four stars only because I want more heat next time, but right call for mixed company.

Cheese choice is the whole top layer and the recipe doesn’t say. Mexican blend goes rubbery at 375. Sharp cheddar or pepper jack hold and get a little pull. I use sharp cheddar every time now.
