Instant Pot Breakfast Casserole

This Instant Pot Breakfast Casserole is an easy, hands-off breakfast made with sausage, eggs, peppers and cheese, and pressure cooking gives the eggs the silkiest, almost soufflé-like texture. It’s easy to customize with your favorite add-ins and perfect for busy mornings or holiday breakfasts when you don’t want a sink full of dishes.

I’ve made a lot of breakfast casseroles over the years, but cooking it in the Instant Pot has become one of my favorite ways to make one. Instead of baking the eggs in the oven, they gently pressure cook in a separate pan inside the Instant Pot, which gives them this incredibly silky, almost soufflé-like texture. I make mine with breakfast sausage, peppers, onion and cheddar cheese, but you can easily change up the meat, vegetables and cheese depending on what your family likes or what you already have in the refrigerator.

This is also a breakfast I’ve made for Christmas morning because it takes some of the stress out of an already busy day. I can cook the sausage and chop the vegetables the night before, then assemble everything in the morning and let the Instant Pot do the cooking while we’re opening presents. I’m not trying to watch something in the oven or standing over the stove making breakfast while everyone else is having fun.

And maybe my favorite part is the cleanup. I cook the sausage using the sauté function right in the Instant Pot, then the casserole cooks in a small cake pan inside the same pot. That means I’m not starting Christmas morning with a sink full of skillets and baking dishes. It’s an easy, hands-off breakfast that still feels special enough to serve on a holiday.

Storage information

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also portion it into individual slices for an easy grab-and-reheat breakfast.

To freeze, let the casserole cool completely, cut it into individual portions and wrap each piece tightly before placing in a freezer-safe container or bag. Freeze for up to 2 months and thaw overnight in the refrigerator before reheating.

To reheat, microwave an individual slice for 30-60 seconds at a time until warmed through. You can also reheat slices in a 350°F oven or air fryer until heated through.

Step by Step Instructions

  1. Prepare cake pan

    Grease a 7 x 3-inch round cake pan with cooking oil and place a circle of parchment paper on the bottom. Set aside.

  2. Brown the sausage

    Set the Instant Pot to saute mode. Pour in avocado oil and add ground sausage once the liner of the instant pot starts to heat up. Break up the sausage as it cooks into crumbles. Let cook until cooked completely through and browned. Turn off saute mode.

    • 1 tablespoon avocado oil
    • 1 lb ground breakfast sausage

  3. Whisk the eggs

    To a large mixing bowl, whisk together eggs, salt and pepper. Set aside.

    • 10 large eggs
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper

  4. Mix casserole ingredients

    Pour the cooked ground sausage into the prepared cake pan. Add diced onion, bell pepper, cheddar cheese and green onion. Mix until combined. 

    For this step

    • 1/4 medium red onion, diced
    • 1/2 medium red bell pepper, diced
    • 1 cup shredded cheddar cheese
    • 2 green onions, sliced

  5. Add egg mixture

    Pour egg mixture over the top of the ground sausage mixture. Cover the cake pan with aluminum foil.

  6. Pressure cook

    To the liner of the instant pot, no need to clean it out, pour in 1 cup water. Then place the cake pan on the trivet that comes with your instant pot and lower it inside of the instant pot. Press the pressure cook button and set to high, then cook for 45 minutes. Allow the pressure to release naturally for 10-15 minutes then release remaining pressure and open the lid when remaining pressure is released. Let cool for 5-10 minutes. Remove the cake pan and cut into slices.

Frequently Asked Questions

Why do you cover the breakfast casserole with foil?

Covering the cake pan with foil keeps condensation from dripping onto the eggs as the Instant Pot comes to pressure and cooks. This helps prevent excess moisture from collecting on top of your casserole.

Can I make this ahead of time?

Yes. For the easiest morning prep, I like to cook the sausage and chop the vegetables the night before and refrigerate them. In the morning, assemble the casserole with the eggs and cheese and pressure cook as directed.

Can I change the meat and vegetables?

Absolutely. Think of this recipe as a basic formula you can customize. Swap the sausage for cooked bacon or ham, add mushrooms or other vegetables, or use a different shredded cheese. Just make sure any meat that needs cooking is fully cooked before it goes into the casserole.

What size pan fits inside an Instant Pot?

I use a 7x3-inch round cake pan for this recipe. Before starting, make sure your pan fits comfortably inside your particular Instant Pot and can sit securely on the trivet.

Why is my Instant Pot breakfast casserole still runny in the middle?

Because this is a thick egg casserole, cooking time can vary slightly depending on your Instant Pot and the ingredients you add. If the center is still runny after cooking, cover it again and pressure cook on high for another 5 minutes, followed by a 10-minute natural pressure release.

Do I need to clean the Instant Pot after cooking the sausage?

No, and this is one of my favorite things about this recipe! After sautéing the sausage, remove it and turn off sauté mode. There’s no need to wash the liner. Add the cup of water, place the casserole on the trivet and continue with the recipe.
