My family loves the flavor of cowboy butter, especially on steak, but I wanted to find another way to use it for an easy weeknight dinner. That's how these Cowboy Butter Meatballs came about! They're juicy, perfectly browned meatballs coated in a rich, garlicky cowboy butter cream sauce with a little heat, tanginess from Dijon mustard and lemon, and just enough sweetness to balance everything out.

I make these meatballs low carb by using pork panko instead of traditional breadcrumbs. Pork panko is simply crushed pork rinds, and it works great as a binder without adding extra carbs. I also add Parmesan cheese for more flavor and make sure not to overmix the ground beef so the meatballs stay tender. Everything comes together in one skillet, and those browned bits left behind from cooking the meatballs add even more flavor to the sauce.

This is one of those easy ground beef dinners that tastes like you spent a lot more time making it than you actually did. I like serving these over mashed turnips or cauliflower rice to soak up all that extra sauce, but they're just as good with a side of roasted vegetables.

What is cowboy butter?

Cowboy butter is a flavorful butter sauce made with garlic, Dijon mustard, lemon juice, herbs, and spices like paprika and red pepper flakes. It's buttery, savory, a little tangy, and has just enough heat to give it a kick. It's traditionally served as a dipping sauce for steak, but it's also delicious with chicken, seafood, and vegetables.

Storage and Make Ahead Instructions

Storage information

Store leftover cowboy butter meatballs and sauce in an airtight container in the refrigerator for up to 3–4 days.

To reheat, place the meatballs and sauce in a skillet over low heat, adding a splash of heavy cream or water to loosen the sauce if needed. Heat gently, stirring occasionally, until warmed through. Avoid boiling, as high heat can cause the cream sauce to separate.

Make ahead instructions

To save time, prepare and shape the meatballs up to 24 hours in advance. Arrange them in a single layer on a parchment-lined baking sheet or in an airtight container, cover, and refrigerate until ready to cook.

You can also cook the meatballs a day ahead and refrigerate them separately from the sauce. When ready to serve, prepare the cowboy butter cream sauce, add the cooked meatballs, and simmer gently until heated through.

Freezer instructions

For the best results, freeze the meatballs without the cowboy butter cream sauce, since cream-based sauces can separate and become grainy after freezing.

To freeze uncooked meatballs: Arrange the shaped meatballs in a single layer on a parchment-lined baking sheet and freeze until solid, about 1–2 hours. Transfer to a freezer-safe bag or airtight container and freeze for up to 3 months.

To freeze cooked meatballs: Allow the cooked meatballs to cool completely, then transfer them to a freezer-safe container or bag. Freeze for up to 3 months.

To thaw and reheat: Thaw the meatballs overnight in the refrigerator. Cook raw meatballs according to the recipe instructions until they reach an internal temperature of 160°F. Prepare the cowboy butter sauce fresh, add the meatballs, and simmer until heated through.

Step by Step Instructions

  1. Prepare the meatballs

In a large bowl, combine the ground beef, salt, black pepper, garlic powder, dried parsley, smoked paprika, pork panko, Parmesan cheese, and egg. Mix gently until just combined, being careful not to overwork the meat.

    For this step

    • 1 lb ground beef
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon dried parsley
    • 1/2 teaspoon smoked paprika
    • 1/2 cup pork panko
    • 1/4 cup grated Parmesan cheese
    • 1 large egg
Raw ground beef mixed with seasonings, herbs, and other meatball ingredients in a glass mixing bowl.
  2. Shape the meatballs

Roll the mixture into 16 evenly sized meatballs, approximately 1½ inches in diameter.

Twelve evenly sized raw meatballs rolled and arranged on a white plate before cooking.
  3. Brown the meatballs

Heat 1 tablespoon of cooking oil in a large skillet over medium heat. Working in batches to avoid overcrowding, add the meatballs and cook for 8–10 minutes, turning occasionally, until browned on all sides and cooked through (160°F internal temperature). Transfer to a plate and set aside.

Homemade meatballs being browned in a skillet with cooking tongs until golden on all sides.
  4. Start the cowboy butter sauce

Drain the excess oil from the skillet, leaving the browned bits for flavor. Reduce the heat to medium-low and melt the butter in the same skillet. Add the minced garlic, smoked paprika, red pepper flakes, and dried thyme. Cook for about 30 seconds, stirring constantly, until fragrant.

    For this step

    • 4 tablespoons butter
    • 3 cloves garlic, minced
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon red pepper flakes
    • 1/4 teaspoon dried thyme leaves
Melted butter, garlic, herbs, and seasonings simmering in a skillet to make cowboy butter sauce.
  5. Make the cream sauce

Stir in the heavy cream, Worcestershire sauce, Dijon mustard, lemon juice, and sugar-free honey. Bring to a gentle simmer and cook for 2–3 minutes, stirring occasionally, until the sauce begins to thicken.

    For this step

    • 1 cup heavy cream
    • 1 tablespoon Worcestershire sauce
    • 1 tablespoon Dijon mustard
    • 1 ½ teaspoons lemon juice
    • 1 teaspoon sugar free honey
Creamy cowboy butter sauce simmering in a skillet with garlic, herbs, and spices.
  6. Combine and serve

Return the meatballs and any accumulated juices to the skillet. Spoon the cowboy butter sauce over the meatballs and simmer for another 2–3 minutes, until heated through and coated in sauce. Sprinkle with fresh parsley and serve over mashed potatoes or your favorite low-carb alternative.

    For this step

    • 2 tablespoons chopped fresh parsley
Browned meatballs simmering in a skillet of creamy cowboy butter sauce until fully coated and ready to serve.

Frequently Asked Questions

Can I use regular breadcrumbs instead of pork panko?

Yes! If you're not worried about keeping these meatballs low carb, you can substitute regular breadcrumbs for the pork panko. I use pork panko because it's made from crushed pork rinds and helps bind the meatballs together without adding extra carbs. You can also make your own by grinding pork rinds in a food processor.

Can I use ground turkey or chicken?

Absolutely! You can substitute ground turkey or chicken for the ground beef. Just keep in mind that poultry is usually leaner, so the meatballs may not be quite as juicy. I recommend using ground turkey or chicken that isn't too lean and being careful not to overcook them. Ground poultry should reach an internal temperature of 165°F.

How spicy are cowboy butter meatballs?

These meatballs have a little kick from the red pepper flakes, but I wouldn't consider them overly spicy. If you're sensitive to heat, start with ¼ teaspoon of red pepper flakes or leave them out completely. If your family likes things spicy, you can always add more.
