I started making these because I wanted a dessert that felt special but only took 30 minutes start to finish. What I ended up with is a thick, gooey chocolate chip bar that comes together in one bowl and bakes in about 25 minutes. Soft in the center, slightly crispy at the edges. The kind of thing you pull out of the oven and immediately want to eat half the pan. The a la mode part (ice cream and homemade magic shell on top) turns it into something you would actually serve to company.

The base uses a keto cake mix (I use Duncan Hines), plus melted butter, nut milk, eggs, and sugar-free chocolate chips. Four extra ingredients and you have cookie bars ready for the oven. I have made these dozens of times now and the texture is consistent every batch. The center stays soft and chewy while the edges get a little golden and firm. If you have ever had a cookie at a bakery where the edges have that slight crunch, that is what you are getting here. I spread the dough about 3/4 inch thick in the pan, which is the sweet spot I have found. Any thinner and you get flat, crispy bars. Any thicker and the center stays underdone even at 27 minutes.

What sets this apart is the a la mode build. You slice the bars while they are still warm, add a scoop of vanilla ice cream, and drizzle homemade chocolate magic shell on top. The chocolate hardens into a crackling shell the second it hits the cold ice cream. Warm bar, cold ice cream, crunchy chocolate. That combination of temperatures and textures is honestly why I keep making this instead of just regular cookies.

The whole recipe is also gluten free since the cake mix uses almond flour instead of wheat. I never used to think about mentioning that, but a few readers asked and it matters if you are baking for someone with a sensitivity. When I don’t feel like pulling out a dozen ingredients and measuring cups to make cookies from scratch, a boxed cake mix handles it. I have tested a few low carb options and these are the two I keep going back to:

How to make keto magic shell

Magic shell is a liquid chocolate topping that instantly hardens when poured over cold ice cream. I make my own sugar-free version by melting chocolate chips with coconut oil. The ratio I have landed on is 1/4 cup chips to 2 teaspoons coconut oil. That proportion gives you a shell that cracks cleanly without being too thick.

Storage and freezing

I store leftover bars in an airtight container at room temperature for 3-4 days. They are best served warm, so I reheat them in the oven (350 degrees for 5-6 minutes), the air fryer (3 minutes at 300), or the microwave (15-20 seconds). I have tested all three and the oven gives the best texture with crispy edges, but the microwave works in a pinch.

You can also freeze these for up to 2 months. I wrap each bar individually in plastic wrap, then store them in a freezer bag. To serve, thaw at room temperature for about 20 minutes or reheat straight from frozen in the oven at 350 for 8-10 minutes.

The magic shell chocolate sauce should be made fresh each time. It only takes a minute in the microwave.

How to make cookie bars a la mode

  1. Make the bar base by combining a boxed cake mix with melted butter, nut milk, eggs, and chocolate chips. I spread it into a parchment-lined 8x8 dish and bake at 350 degrees for 25-27 minutes. You want a clean knife when you test the center.
  2. Slice while still warm. I give them about 3-5 minutes to set, then cut into squares. They hold together better slightly warm than straight out of the oven.
  3. Build the a la mode. Top each square with a scoop of vanilla ice cream and drizzle the homemade magic shell over the top. It hardens on contact.

  1. Preheat oven & prepare baking dish

    Preheat oven to 350 degrees Fahrenheit. Coat a square 8×8 baking dish with cooking spray and line with parchment paper. Set aside.

How many net carbs are in these bars?

Each bar (without ice cream and magic shell) comes out to about 3-4g net carbs depending on which cake mix you use. I use Duncan Hines Keto Cake Mix for this recipe. With a scoop of ice cream and the magic shell, I'm usually around 6-8g net carbs total per serving.

Can I freeze these bars?

I freeze these all the time. I wrap each bar individually in plastic wrap, drop them in a freezer bag, and they keep for up to 2 months. When I want one, I either thaw it on the counter for about 20 minutes or put it straight in the oven at 350 for 8-10 minutes from frozen. The texture holds up well after thawing.

Can I make double chocolate bars?

I have done this and it works great. Just use a chocolate cake mix instead of the yellow variety and keep the chocolate chips in there too. It comes out more like a keto double chocolate chip cookie in bar form. Rich, fudgy, and very satisfying.

How can I make this recipe dairy-free?

I swap the melted butter for melted coconut oil (same amount) and use dairy-free ice cream on top. The bars taste just as good with coconut oil. I actually prefer the slight coconut undertone it gives the base.

I have tested Duncan Hines, Scotty's Everyday, and Sweet Logic. All three work. Duncan Hines gives me the chewiest result, which is what I want in a bar like this. I haven't tested every brand out there, so if you try a different one, the results might vary.

Are these bars gluten free?

Yes. The keto cake mixes I use are almond flour based, so there is no wheat in these. I have served them to friends with gluten sensitivities and had no issues. Just double check your specific cake mix label to be sure.

Can I make these without a boxed cake mix?

You can, but it becomes a different recipe at that point. My keto almond flour chocolate chip cookies are made from scratch if that is what you are after. The whole point of this recipe is the shortcut. I reach for it when I want dessert in 30 minutes, not an hour.

How do I reheat leftover bars?

I have tested the oven, air fryer, and microwave. The oven (350 degrees, 5-6 minutes) gives the best texture with crispy edges. The air fryer at 300 for 3 minutes is a close second. The microwave works if you are in a hurry (15-20 seconds), but the edges won't crisp back up. I always reheat before adding ice cream.

Mine clicked at batch three, Camila. Two tablespoons of coconut oil per cup of chips, and pour it on while the bars are still a little warm. Cold chocolate on a cold bar never sets right.

I’m pretty deep into year two of keto and I’d mentally crossed dessert a la mode off the list entirely. Not cookie bars specifically, just the whole warm-thing-plus-ice-cream category felt impossible to replicate. 9 servings from one 8×8 assumes you have discipline I don’t. I double batch and cut all 18 before the week starts, individually wrapped. Holds shape better. Reheat 30-40 seconds in the microwave, not the oven, and the center softens back up fast. What the recipe skips: the bar needs to be warm when you assemble. Cold bar against cold ice cream isn’t the point. I keep the magic shell ingredients separate and make it fresh each time. Two minutes, barely worth storing the leftover. Protein is 2.4g per square so practically I count on eating two, factor that in when you’re portioning.

The warm bar thing is real, Ryan. I’ve served these cold and it’s just two cold things sitting on a plate. Microwave makes more sense here anyway, you want the center soft, not the edges re-crisped by the oven.

Stick with the cake mix even if your gut says scratch. I tried almond flour first and it turned to mush under the ice cream in about two minutes. Duncan Hines just doesn’t do that. Kind of the whole point when you’re serving it a la mode.

Somewhere around the fourth batch I started pulling these a few minutes early, and the centers stayed fudgy instead of setting all the way through. The magic shell still cracks the same when you dig in (that part never gets old), but it feels totally different against the ice cream when the bar has some give to it. If you’re new to this: let the bars sit for at least 10 minutes before cutting them. I didn’t the first time and they came apart in chunks. Let them rest and they slice clean, and the magic shell actually cracks the way it should when you pour it over warm. Didn’t realize the coconut oil was what made that happen until I looked it up. Obvious in hindsight but worth knowing.

Browned the butter before mixing it in instead of just melting it, and the base has this almost toffee-y depth I wasn’t expecting from a cake mix bar. Three batches in and that’s the one step I won’t skip. The sugar-free magic shell over a still-warm bar is doing something I can’t stop thinking about, that crack is real and it’s absurd. One note: the Duncan Hines mix bakes up better at 22-23 minutes in my oven. The 20-minute mark left the center slightly underdone the first time. Four stars, but the browned butter version is closer to five.
