Bacon Bourbon Keto Meatballs

Glazed in a tangy BBQ bourbon sauce, these juicy bacon bourbon meatballs come out of the air fryer in under 15 minutes — just 0.5g net carbs each. I bring them to every tailgate and Super Bowl party, and they never make it home.

I started making these bacon bourbon meatballs for game day a few years ago, and now they show up at every party I throw. The combination of smoky bacon, ground beef, and a bourbon BBQ glaze is the kind of appetizer that makes people crowd the kitchen counter.

The secret is crushed pork rinds instead of breadcrumbs. They keep the meatballs tender and hold everything together without adding carbs. I mix the bacon right into the meat (not wrapped around it) so you get that smoky, salty hit in every single bite.

What makes these different from regular meatballs is the sauce. I simmer bourbon with a low-sugar BBQ sauce until it thickens into this sticky, tangy glaze. It coats the meatballs without drowning them. Think smoky, a little sweet, with that bourbon warmth at the finish.

I prefer the air fryer because it takes 6 minutes and the outside gets a nice sear while the inside stays juicy. But if you need a bigger batch for a party, the oven works too. I've done both dozens of times and honestly, the air fryer edges out the oven every time for texture.

These are my go-to keto appetizer because I can prep them the night before, pop them in the air fryer right before guests arrive, and have a platter ready in minutes. I set them out with toothpicks and a little extra sauce on the side. They pair well with my BBQ cheeseburger meatloaf if you want a full spread.

If you love meatball recipes, I have a whole lineup. My air fryer keto meatballs are the classic version, keto pizza meatballs are stuffed with mozzarella, and the keto taco meatballs have a Tex-Mex twist. All of them are on my keto beef recipes page.

I've been serving these at our Friday night hangouts and game day parties for years. They work as an appetizer with toothpicks, tossed over cauliflower rice for dinner, or honestly just eaten straight off the tray while I'm standing at the counter. No judgment.

Why These Bourbon Meatballs Disappear at Every Party

I’ve made a lot of meatball recipes over the years, and these bourbon-glazed ones get the biggest reaction. The combo of bacon mixed right into the ground beef with a sticky bourbon BBQ sauce is the kind of appetizer where people hover near the platter. I set these out at our last Super Bowl party and the whole tray was gone in 20 minutes.

Besides being my favorite party appetizer, they come together fast. I usually go with the air fryer because 6 minutes and they’re done. The oven works too if you need a bigger batch. Either way, you’re eating in under 15 minutes from the time you start cooking.

Air Fryer Meatballs

I’m a huge fan of cooking meatballs in the air fryer. Not only do they cook quickly, but the circulating heat gives them a sear on the outside while the inside stays juicy. That’s hard to get in the oven.

Place your meatballs in a single layer on the air fryer tray or basket. I space mine about 1/2 inch apart. Crowding them traps steam and you lose that crispy exterior.

Air needs to flow around each piece for even cooking. I usually cook in two batches if I’m making a double recipe for a crowd.

Oven Instructions

If you don’t own an air fryer, the oven works well. I line a baking sheet with parchment, space the meatballs about an inch apart, and bake at 400 degrees for 9-13 minutes.

They take longer in the oven, but you can cook more at once since the air fryer basket only holds about 12-15. For big parties, I’ll bake the full batch in the oven and save time on rotation. Check out my full air fryer recipes collection if you want more ideas.

Is Bourbon Keto?

Yes, bourbon is keto friendly. Most hard liquors are low carb, and whiskey has zero net carbs per serving. I use it in cocktails and in cooking because it adds a smoky depth you can’t get from other ingredients.

If you’re in the California area, I highly recommend Denny Bar Distillery. Their Roosevelt Rye Whiskey is a 4-year-old rye that I’ve been using in this recipe for the last year. Any mid-shelf bourbon or rye works though. I’ve tested cheap bourbon and top-shelf, and honestly the sauce masks most of the subtlety, so save the good stuff for sipping.

BBQ Sauce

Use a low-sugar BBQ sauce for this recipe. My homemade BBQ sauce takes a few minutes and it’s what I reach for every time. The flavor is better than store-bought and I know exactly what’s in it.

If you don’t want to make your own, Primal Kitchens and Lillie’s Q both make solid options. I keep both in my pantry for nights when I need something fast. They work in my BBQ chicken too.

Make Ahead Meatballs

If you need a keto appetizer you can make ahead, these are perfect for it. I prep the meatballs, roll them, and freeze them uncooked in a single layer in a freezer bag. They keep for up to 3 months.

The night before your party, move them to the fridge to thaw. Then cook as usual in the air fryer or oven. I’ve also reheated pre-cooked batches by warming them in a saucepan with extra sauce over low heat for 5-7 minutes. They come back almost as good as fresh.

Frequently Asked Questions

Can I use ground turkey instead of ground beef for these meatballs?

I've made these with ground turkey and they turn out lighter in flavor but still good. I bump up the smoked paprika and add an extra slice of chopped bacon to compensate. The texture is a little softer, so I chill them in the fridge for 15 minutes before cooking to help them hold their shape.

Can I make these in a slow cooker or crockpot?

I've done the slow cooker method and it works well for parties where you want them staying warm for hours. I sear the meatballs in a skillet first (just 2 minutes per side), then add them to the crockpot with the bourbon BBQ sauce on low for 3-4 hours. They get super tender and soak up all that sauce. This is my preferred method when I'm hosting and don't want to babysit the air fryer in batches.

What's the best bourbon to use for this recipe?

I've tested everything from bottom-shelf to premium and my honest take is that a mid-range bourbon or rye works best. The sauce simmers down and the subtle notes get lost anyway. I usually reach for Denny Bar's Roosevelt Rye or whatever bourbon is already open in my cabinet. Save the expensive stuff for drinking.

How do I reheat leftover meatballs?

I warm them in a saucepan with a splash of extra sauce over low heat for 5-7 minutes. The microwave works in a pinch but they can dry out. If I'm reheating a big batch, I toss them in the oven at 325 degrees for 8-10 minutes covered with foil. They bounce back well either way.

Can I double this recipe for a large party?

I double this all the time for game day. The sauce recipe scales perfectly. For the meatballs, I use the oven method when making a big batch since the air fryer only holds about 12-15 at a time. I line two baking sheets and rotate them halfway through. My last Super Bowl party I made a triple batch and had zero leftovers.

Is bourbon keto friendly?

Yes. I drink bourbon regularly and cook with it all the time. Whiskey has zero net carbs per serving. The carbs in this recipe come from the BBQ sauce, not the bourbon. I use my homemade low-sugar BBQ sauce to keep the total carb count down.

What can I use instead of pork rinds?

I've tested crushed almonds and almond flour as substitutes. Both work, but the texture is slightly different. Pork rinds give the meatballs a lighter, more tender bite. Almond flour makes them a bit denser. I use about 2 tablespoons of almond flour to replace 1/4 cup of crushed pork rinds.

Can I bake these meatballs instead of using an air fryer?

I bake these in the oven whenever I need a bigger batch. Preheat to 400 degrees, line a baking sheet with parchment, and bake for 9-13 minutes. They won't get quite as crispy on the outside as the air fryer version, but the flavor is the same and you can cook 30+ at once.

Kind of embarrassing, but the bourbon in that glaze tastes exactly like the cocktail meatballs from every party I went to in my twenties!!! No grape jelly required, and these are SO much better.

Confession, I was dicing the bacon cold from the package and it smeared more than it chopped. Ten minutes in the freezer first and it cuts clean, so you get bacon pieces through the meatball instead of paste. I rolled mine a little smaller than the inch the receipe calls for too, and more of the surface picked up the glaze.

Bacon inside the meatball. Took one taste to understand why.

Reply

Annie Lampella

Thanks Lisa! I mix the bacon in raw so it renders right into the beef while they cook.

The glaze is great, but 1/4 cup of parsley was too much, grassy against the bourbon. Going with a tablespoon next time.

Reply

Annie Lampella

Christine, I think fresh parsley reads more grassy than dried in this one, and 1/4 cup is a lot when bourbon is already carrying the sauce. A tablespoon makes more sense.

Let the glaze simmer a full three minutes before adding the meatballs back in. The bourbon cooks down and that sharp edge softens. My dad made a cocktail meatball for every family party (grape jelly, Heinz chili sauce, toothpicks in a warming dish) and somewhere in that air fryer glaze is the same pull. I wasn’t expecting keto meatballs to take me there.

Smells incredible, but I’d cut the bourbon by half.

Reply

Annie Lampella

I’d try the full amount first. Most of it cooks off and the flavor mellows. Half works if you’re really sensitive to alcohol, but the sauce thins out a bit.

0.5 carbs each stopped me mid-scroll so I made a batch that same night with turkey because that’s all I had, and the bourbon glaze crisped up exactly like the photos. Turkey’s a little leaner so they’re not quite as rich, but they held together fine in the air fryer and I already have beef in the cart for the weekend version.

Reply

Annie Lampella

Turkey holds up better than you’d think in the air fryer. I throw in an extra slice of chopped bacon to make up for the leaner meat. Beef hits different though.

Reply

Elizabeth J.

Never even thought about adding extra bacon, doing that for the turkey version this weekend before I switch to beef.

These have been made twice in this house in the last two weeks and I only made them once. My partner, who normally treats dinner like fuel and not much else, picked up the sauce bowl mid-meal to check what was in it, got ‘bourbon and BBQ sauce’ as the answer, and apparently that was all he needed. He made them himself six days later. I came home to the kitchen smelling like bacon fat and caramel and found him poking at them in the air fryer. Weird compliment, but I’ll take it. The bacon in the mix is what I didn’t expect from this recipe, it makes the texture a little looser than a straight beef meatball, almost more tender. Next test: does the sauce hold up if I double the batch and reheat.

Reply

Annie Lampella

Reheat in a saucepan over low with a splash of extra sauce. Your partner air frying them himself six days later is the review I actually want.

Was skeptical about pork rinds as the binder but kept the recipe as written. They held up through the whole air fryer run, no fallout, even crisped a bit on the outside. The bourbon comes through in the glaze more than I expected. I’d push the garlic a little more next time, but I was back making these five days later so that says something.

Reply

Annie Lampella

Three cloves minimum next time. The 2 is just the baseline, I’ve gone up to 4 and it holds. The pork rind doubts always disappear after batch one.

Don’t own an air fryer so I baked these at 400 for about 22 minutes instead. Brushed the glaze on in the last five minutes and it got sticky and almost caramelized around the edges, which I wasn’t expecting from the oven. Really happy with how they came out, though I can tell I’m probably missing some crispiness from the air fryer version.

Reply

Annie Lampella

The oven caramelization surprised me too the first time. For more crispiness, hit them with the broiler the last 2 minutes. Gets you pretty close.

Honestly thought real party food was gone when I started keto. Made these for Super Bowl weekend and the bourbon glaze had people asking where I ordered them from. Still feels a little unreal that this is allowed.

Reply

Annie Lampella

Ha, ‘where’d you order those’ is my favorite reaction to get. The glaze caramelizes in the air fryer in a way that makes them look way more involved than they are. 15 minutes.
