Mini Keto Chicken Pot Pies

These mini keto chicken pot pies are an easy shortcut dinner made with canned chicken, frozen mixed vegetables, and my homemade low carb cream of chicken soup. Everything gets tucked inside my flaky keto pie crust that rolls out just like regular pie dough, giving you that classic chicken pot pie experience without all the carbs.

I wanted these mini keto chicken pot pies to have everything I love about a classic chicken pot pie: a rich, creamy chicken and vegetable filling surrounded by an actual flaky pie crust. A lot of keto chicken pot pie recipes rely on biscuit toppings or other dough substitutes, but for me, the crust is one of the best parts. My keto pie crust can be rolled, cut and shaped much like regular pie dough, so I knew it would be perfect for turning chicken pot pie into individual little pies.

What makes these mini pies so good

  • A flaky keto pie crust: These aren't chicken pot pies topped with biscuits or fathead dough. I use my homemade keto pie crust, which is flaky, buttery and actually rolls out like traditional pie dough. We cut it into rounds and press it into a muffin pan so every little pot pie gets plenty of crust.
  • They're mini: Making individual chicken pot pies means you get creamy filling and flaky crust in every serving. They're also easy to portion and great for a family dinner.
  • Easy homemade cream of chicken soup: Instead of reaching for canned condensed soup, I make my own low carb cream of chicken soup with cream cheese, heavy cream and chicken broth. There's no cooking involved. Just mix everything together and it's ready to use.
  • No thickeners needed: You won't find flour, cornstarch or xanthan gum in the filling. The cream cheese gives the homemade cream of chicken soup enough body that the filling stays thick and creamy as the mini pies bake.
  • Canned chicken keeps it easy: I developed these as a shortcut dinner, so I use canned chicken. It's already cooked and ready to mix into the filling, but shredded rotisserie chicken or any leftover cooked chicken works just as well.

I also wanted to keep the filling as simple as possible. That's actually why I developed my homemade keto cream of chicken soup. Instead of cooking a sauce on the stove or using flour, cornstarch or xanthan gum to thicken the filling, I mix together my no-cook cream of chicken soup and add canned chicken and vegetables. It gives you that thick, creamy pot pie filling with very little prep.

And while canned chicken is my favorite shortcut here, I've made enough chicken pot pie over the years to know this is also a great recipe for using up leftover cooked chicken or a rotisserie chicken when that's what you have on hand.

Make a whole pot pie

If you’d rather make one whole keto chicken pot pie, you can use the same crust and filling and assemble it in a standard 9-inch pie pan instead of a muffin pan. Roll out the keto pie dough and press it into the bottom and up the sides of a greased pie pan, then add the chicken pot pie filling.

You can leave it open-faced or make an additional batch of pie crust for the top, cutting a few slits in the center to let steam escape. Bake at 350°F for 30-32 minutes until the crust is golden brown and the filling is hot and bubbly; a full-size pot pie will take longer to bake than the mini version, so start checking it around 30 minutes and add more time as needed.

Store leftover mini keto chicken pot pies in an airtight container in the refrigerator for up to 3–4 days. To help bring back that flaky crust, I recommend reheating them in the oven or air fryer rather than the microwave, which can soften the crust.

Make ahead

You can make the pie dough and chicken pot pie filling ahead of time and store them separately in the refrigerator.

The pie dough can be made up to 2–3 days in advance and kept tightly wrapped, while the filling can be prepared up to 2 days ahead. When you’re ready to bake, roll and cut the crust, press it into the muffin pan, add the filling and bake as directed. I prefer waiting to assemble the pies until close to baking so the creamy filling doesn’t sit against the unbaked crust and make it soggy.

Step by Step Instructions

  1. Mix pie crust dry ingredients

    Add the almond flour, coconut flour, xanthan gum and salt to a food processor. Pulse a few times to combine.

    For this step

    • 1 cup almond flour
    • 3 tablespoons coconut flour
    • 1 teaspoon xanthan gum
    • 1/2 teaspoon salt

  2. Finish pie dough

    Add the cold, cubed butter and cream cheese. Pulse just until the mixture becomes crumbly and small pieces of butter are still visible throughout the dough. Add the egg and vinegar and pulse again until the mixture comes together to form a dough ball.

    • 7 tablespoons unsalted butter, chilled and cubed
    • 1 ounce cream cheese
    • 1 large egg
    • 1½ teaspoons rice vinegar or apple cider vinegar

  3. Chill the dough

    Place the dough ball in between two sheets of parchment paper. Flatten the dough into a round disc and refrigerate for 30 minutes to thoroughly chill.

  4. Roll crust and cut shapes

    Starting in the center, roll outward until the dough is about ⅛ to ¼ inch thick. As you roll the dough, periodically flip the entire parchment paper sandwich over, peel off the bottom sheet of parchment, lay it back down, and continue rolling. I do this several times as I roll to keep the parchment from wrinkling underneath and to prevent the dough from sticking to either sheet.

  5. Cut mini pie crusts

    Preheat the oven to 400°F and grease a muffin pan. Using a 4-inch biscuit or cookie cutter, cut out as many circles as you can from the rolled dough and gently press each circle into a muffin cup. Gather the scraps, roll the dough out again, and continue cutting out circles. For the last two crusts, divide the remaining dough into two equal portions, roll each into a ball, and press the dough directly into the greased muffin cups, working it evenly along the bottom and up the sides. Refrigerate the prepared crusts while you make the chicken pot pie filling.

  6. Make cream of chicken soup

    Add the softened cream cheese to a medium bowl. Beat using an electric mixer until smooth and creamy. Add heavy cream. Open the canned chicken and measure out 1/4 cup of chicken broth. Add to the cream cheese. Drain and discard remaining broth from the canned chicken. Mix in chicken bouillon, garlic powder and onion powder until completely combined. Continue mixing until thickened.

    • 4 oz cream cheese, softened
    • 1/3 cup heavy cream
    • 1/4 cup chicken broth
    • 1/2 teaspoon chicken bouillon
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon onion powder

  7. Finish the filling

    Add the drained canned chicken and cooked mixed vegetables. Gently stir until the chicken and vegetables are evenly coated in the creamy sauce.

    • 12.5 oz can chicken, drained
    • 1 cup frozen mixed vegetables, steamed and drained

  8. Fill the mini pies and bake

    Spoon the filling into the prepared keto pie crusts and bake for 20 minutes or until crust is golden brown along the edges and filling is set. Let cool for 10-15 minutes in the pan before removing.

Frequently Asked Questions

Can I use rotisserie chicken instead of canned chicken?

Yes. I use canned chicken because it makes these pot pies incredibly quick and easy, but shredded rotisserie chicken or leftover cooked chicken works just as well. Just make sure the chicken is already fully cooked before adding it to the filling.

Do I need to cook the filling before baking the pot pies?

No. That's one of my favorite shortcuts with this recipe. The chicken and vegetables are already cooked, and my homemade cream of chicken soup doesn't require any cooking, so you can mix the filling together and spoon it directly into the pie crusts.

Aren't peas and carrots too high in carbs for keto?

Peas and carrots contain more carbs than many other low carb vegetables, but you can still use a small amount depending on your individual carb goals. If you want to lower the carbs further, you can substitute lower carb vegetables like broccoli, green beans, mushrooms or zucchini.
