Can I use a different milk instead of macadamia nut milk?

Sunday prep means the ChocZero chips go in the saucepan, and my daughter has started treating this as appointment viewing. Last week she asked to taste before the espresso went in. So I couldn’t find macadamia nut milk at my store so I used full-fat coconut milk instead and genuinely was not prepared for how good it turned out, the texture came out so thick and creamy it almost feels wrong to call it a coffee drink. I was ready to be disappointed. But here’s the thing I also figured out (the hard way) that if you pour the white chocolate mixture straight off the stove onto the espresso it basically flattens the coffee flavor entirely, the heat just drowns it out, so now I cool it for about 5 minutes first and the espresso actually comes through and balances the sweetness. Four stars because I haven’t done it exactly as written yet and it feels dishonest to give five when I’ve been winging the whole thing, but the coconut milk version is freaking unbelievably good and I’ve made it every morning this week. Going to try the batch-on-Sunday approach from the description next because that sounds like exactly my speed.

Cooling it first is right. Pouring it straight off heat drowns the espresso, five minutes makes a difference. Canned coconut milk has way more body than carton, which is why yours came out so thick.

Used regular heavy cream but went light on the macadamia nut milk because I wasn’t sure I’d like it, and the drink came out almost too thick to sip through a straw. Thinned it out with a little extra espresso and that fixed it. The white chocolate flavor is actually there, not just sweetness like most sugar-free syrups. If I made it again I’d probably start with less cream and adjust up, but overall it does what it says it does.

Warm the cream first. That’s the fix. Cold cream hitting the chips is what’s leaving those bits behind. I heat it to just barely steaming, pull it off the burner for a minute, then add the chips all at once and stir. They come together in about a minute with no patches. Going higher on the heat tends to do the opposite (sauce separates).

Medium heat, stir constantly. Seriously, don’t step away. The cream helps it melt smooth but these chips can go grainy fast if the heat spikes even for a second. And yes, splash in more macadamia milk to thin it out, just add a little at a time so you don’t overshoot.

The separation is normal, just alarming the first time you see it. Low heat and a few stirs and it comes back together. For espresso, 1 shot is where I’d start and just go from there, the recipe range is wide on purpose.
