I make this keto strawberry sauce with just two ingredients: fresh strawberries and a sugar-free sweetener. It thickens on its own without any gums or additives, and I pour it over everything from pancakes to cheesecake.

I’ve been making this sauce for years, and the thing I get asked about most is how it thickens without cornstarch or xanthan gum. The answer is simple: strawberries have natural pectin, and when you cook them down with sweetener, they release it. No additives needed. I’ve tested it side by side with thickener-based versions, and the texture is better without them.

The whole recipe takes about 10 minutes on the stove. You quarter the strawberries, toss them in a pan with keto honey or monk fruit, and cook until they break down and bubble. Then you decide the texture: mash with a fork for a chunky, rustic sauce, blend for a smooth syrup, or strain for a thin drizzle. I usually go fork-mashed because I like seeing the berry pieces.

What makes this better than store-bought is what’s not in it. Most sugar-free strawberry syrups rely on soluble corn fiber, artificial colors, or gum thickeners. This one is just fruit and sweetener. That’s it. And because you control the cook time, you control the consistency.

I use this on everything. It’s my go-to topping for keto cheesecake fluff, and it’s incredible swirled into strawberry sorbet before freezing. For breakfast, I spoon it over pancakes or waffles. For dessert, I layer it into parfaits or drizzle it on ice cream.

If you want a jam-style version, stir in a tablespoon of chia seeds after cooking and let it sit for 15 minutes. The chia seeds absorb the liquid and give you a thick, spreadable texture that lands in chia seed jam territory. I keep a jar of each in my fridge most weeks.

One thing to know: the sauce looks watery when you first start cooking. That’s the berries releasing moisture. Don’t panic and don’t add thickeners. Just keep stirring and it cooks down. By minute 7 or 8, you’ll see it start to gel. It thickens even more as it cools.

Cook strawberries

Remove green stems from fresh strawberries and cut into quarters. Place strawberries in a medium sauce pan. Add keto honey or sweetener and cook strawberries over medium heat stirring frequently, and cook until strawberries are soft and mixture is bubbly and thickened (about 5 to 10 minutes).

Smash strawberries

Mash strawberries up with fork or potato smasher. You can use this strawberry syrup as is, or blend in a blender for a very smooth syrup or strain strawberries if desired. Makes 1 – 1 1/2 cups. Serving is 1/4 cup

    Used frozen strawberries. Fresh ones at my store still look sad this time of year, and they might actually work better anyway. They broke down so fast I barely had to smash them, sauce was thick and glossy in like 8 minutes flat. Been pouring it over Greek yogurt every morning this week and already planning a double batch so I stop running out.

    I almost didn't try this because I couldn't see how it would thicken without cornstarch. Two ingredients, figured it'd end up watery. But I had frozen strawberries taking up space and a free Sunday, so I gave it a shot. The smashing step was oddly satisfying, and watching it thicken on its own actually surprised me. I went with monk fruit since that's what I had, came out sweeter than expected (had to hold back a little). Still working on the consistency, which is probably why I'm at four stars instead of five. Poured it over yogurt that cold afternoon. Exactly what I needed.
