This easy chicken Cobb salad has all the classic ingredients, juicy chicken, crispy bacon, hard boiled eggs, avocado, tomatoes, and blue cheese, but it’s made as a single serving so it’s perfect for a quick lunch or easy portion-controlled dinner. The creamy avocado ranch dressing is what pulls everything together and adds so much flavor to an already loaded salad.

I love a good Cobb salad, but every recipe I come across always seems to make this giant platter-sized salad meant to feed your whole family or bring to a party. Sometimes I don’t want to chop enough lettuce to fill a mixing bowl the size of my kitchen sink, I just want one really good Cobb salad for myself. That’s exactly why I started making this single serve version. It has all the classic Cobb salad ingredients I crave, juicy chicken, crispy bacon, hard boiled eggs, avocado, tomatoes, blue cheese, and crunchy romaine, but scaled down into an easy meal that doesn’t leave me with a fridge full of leftovers.

This is one of those recipes I make when I want something quick but still filling enough to keep me satisfied for hours. Since it’s packed with protein from the chicken, eggs, and bacon, it works really well for a high-protein, low-carb lunch or an easy dinner when I don’t feel like cooking a full meal. And because it’s portioned for one, it’s also great if you’re trying to be a little more mindful about portions without feeling like you’re eating “diet food.” This salad eats like a full meal.

It’s all about the dressing…

The avocado ranch dressing is probably my favorite part. I love adding avocado to Cobb salad already, so turning it into a creamy ranch-style dressing just makes sense. It’s thick, creamy, loaded with flavor, and coats all the ingredients perfectly. I usually make the dressing first so it has a few minutes for the flavors to come together while I prep the rest of the salad.

Chicken Cobb Salad

Cobb Salad Ingredients

  • 1/2 medium head romaine lettuce
  • 4 oz cooked chicken
  • 2 slices bacon, cooked & crumbled
  • 1 hard-boiled egg, sliced
  • 5 cherry or grape tomatoes, halved
  • 5 slices of cucumber
  • 1 tablespoon diced red onion
  • 2 tablespoons crumbled blue cheese
  • 1 teaspoon finely chopped chives

Avocado Ranch Dressing Ingredients

  • 1/4 medium avocado
  • 1 tablespoon sour cream or plain greek yogurt
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon lemon juice
  • 1 tablespoon chopped fresh cilantro
  • 2 teaspoons chopped fresh chives
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon garlic powder
  • salt & pepper to taste

Prep the lettuce

Chop, rinse and dry lettuce. Should end up with about 2.5-3 cups of chopped lettuce.

Tip Chop the lettuce into small bite sized pieces for better texture and enjoyable eating experience.

Make the dressing

While lettuce is drying, prepare the avocado ranch dressing. Combine all ingredients in a small blender or mini food processor. Blend until creamy. Taste and add salt and pepper as needed.

Tip If the dressing is too thick, use water to thin it out.

Assemble time

Assemble all the ingredients of the salad and drizzle dressing on top. Toss to combine.

Salad texture matters

One thing I’ve learned after making a lot of salads over the years is that texture matters just as much as flavor. I like keeping the lettuce extra crisp, the bacon freshly cooked, and the chicken warm when I add it to the salad. You get the crunch from the romaine, creaminess from the avocado and dressing, salty bites of bacon and blue cheese, and enough protein to actually make this feel like a real meal instead of a sad side salad. That’s why I love making single portion salads! I get that fresh crunch and don’t have to battle a soggy salad the next day.

Tips for the best cobb salad

  • Dry your lettuce really well. Watery lettuce will water down the dressing and make the salad soggy fast. I always use a salad spinner if I have one.
  • Use freshly cooked bacon if possible. Crispy bacon adds so much texture to a Cobb salad, and it tastes way better than pre-cooked bacon that’s been sitting in the fridge.
  • Warm chicken makes a difference. I love adding slightly warm chicken over the cold lettuce and toppings because it makes the salad feel more like a full meal.
  • Cut everything into bite-sized pieces. One of the best things about a Cobb salad is getting a little bit of everything in each bite.
  • Add the dressing right before serving. This keeps the romaine crisp and prevents the salad from getting soggy.

Storage information

Even though this is a single serve Cobb salad recipe, you can absolutely prep it ahead of time for an easy lunch later. I recommend storing the dressing separately. Once assembled, the salad will keep in the fridge for about 1 day. If you store the ingredients separately, especially the lettuce, chicken, bacon, and dressing, they’ll stay fresh for up to 3 days in the refrigerator. Just toss everything together when you’re ready to eat.
