I love a good Cobb salad, but every recipe I come across always seems to make this giant platter-sized salad meant to feed your whole family or bring to a party. Sometimes I don’t want to chop enough lettuce to fill a mixing bowl the size of my kitchen sink, I just want one really good Cobb salad for myself. That’s exactly why I started making this single serve version. It has all the classic Cobb salad ingredients I crave, juicy chicken, crispy bacon, hard boiled eggs, avocado, tomatoes, blue cheese, and crunchy romaine, but scaled down into an easy meal that doesn’t leave me with a fridge full of leftovers.

Fork lifting a bite of chicken cobb salad with chicken, egg, lettuce, tomato, and creamy dressing.

This is one of those recipes I make when I want something quick but still filling enough to keep me satisfied for hours. Since it’s packed with protein from the chicken, eggs, and bacon, it works really well for a high-protein, low-carb lunch or an easy dinner when I don’t feel like cooking a full meal. And because it’s portioned for one, it’s also great if you’re trying to be a little more mindful about portions without feeling like you’re eating “diet food.” This salad eats like a full meal.

It's all about the dressing...

The avocado ranch dressing is probably my favorite part. I love adding avocado to Cobb salad already, so turning it into a creamy ranch-style dressing just makes sense. It’s thick, creamy, loaded with flavor, and coats all the ingredients perfectly. I usually make the dressing first so it has a few minutes for the flavors to come together while I prep the rest of the salad.

Single serving chicken cobb salad drizzled with creamy avocado herb dressing and served with fresh lime wedges.

Salad texture matters

One thing I’ve learned after making a lot of salads over the years is that texture matters just as much as flavor. I like keeping the lettuce extra crisp, the bacon freshly cooked, and the chicken warm when I add it to the salad. You get the crunch from the romaine, creaminess from the avocado and dressing, salty bites of bacon and blue cheese, and enough protein to actually make this feel like a real meal instead of a sad side salad.

That’s why I love making single portion salads! I get that fresh crunch and don’t have to battle a soggy salad the next day.

Tips for the best cobb salad

  • Dry your lettuce really well. Watery lettuce will water down the dressing and make the salad soggy fast. I always use a salad spinner if I have one.
  • Use freshly cooked bacon if possible. Crispy bacon adds so much texture to a Cobb salad, and it tastes way better than pre-cooked bacon that’s been sitting in the fridge.
  • Warm chicken makes a difference. I love adding slightly warm chicken over the cold lettuce and toppings because it makes the salad feel more like a full meal.
  • Cut everything into bite-sized pieces. One of the best things about a Cobb salad is getting a little bit of everything in each bite.
  • Add the dressing right before serving. This keeps the romaine crisp and prevents the salad from getting soggy.

Storage information

Even though this is a single serve Cobb salad recipe, you can absolutely prep it ahead of time for an easy lunch later. I recommend storing the dressing separately.

Once assembled, the salad will keep in the fridge for about 1 day. If you store the ingredients separately, especially the lettuce, chicken, bacon, and dressing, they’ll stay fresh for up to 3 days in the refrigerator. Just toss everything together when you’re ready to eat.

Frequently Asked Questions

Can I make this Cobb salad ahead of time?

Yes, but I recommend storing the dressing separately until you’re ready to eat so the lettuce stays crisp. You can prep the chicken, bacon, eggs, and chopped veggies ahead of time to make assembly even faster later.

What’s the best chicken to use for Cobb salad?

I usually use leftover grilled chicken or rotisserie chicken because it’s quick and easy. This recipe is also great with baked chicken breast, shredded chicken, canned chicken or even steak if that’s what you have on hand.

Can I double this recipe?

Definitely. This recipe is written as a single serving because sometimes I just want a Cobb salad for myself, but you can easily double or triple everything if you’re feeding more people.

Bringing your Cobb salad to a work lunch Thursday. Hoping the avocado ranch holds up in the fridge that long. 🙂

On Sunday I put one bowl together for myself, and my son sat down across from me mid-conversation and I ended up giving him most of it. Made two on Monday. The avocado ranch sits heavier than I expected from a salad dressing. The blue cheese brings something a regular ranch wouldn’t. He didn’t say a word about it, which around here is the highest praise.

Cobb salad was my standing Friday order at this little deli near my old office, and I sort of let it go when I went keto. Made this yesterday and honestly wasn’t expecting to feel anything, the avocado ranch on cold romaine brought the whole thing back.

Four days in a row for lunch. Zero regrets!!

I’ve been avoiding Cobb salads for a year because I assumed the keto dressing would be the weak point. It isn’t. The blue cheese is a little light as written though, I doubled it and it was way better.

Annie Lampella

Doubling the blue cheese is a great call. I go heavy on it too when I have it.

Rotisserie chicken instead of cooking my own. Holds in the avocado ranch without going dry. Six batches. Annie, you got the dressing right.

Reply

Annie Lampella

Rotisserie holds up better in this one, fat content. Fresh-cooked breast goes dry once the dressing sits on it. Six batches in and I basically have it memorized.

The sound the romaine makes when it’s actually dry enough is my new benchmark for salad prep. I hosted a Sunday lunch and used this as the main dish, scaled to eight, and the part I almost got wrong was timing. Dressed and tossed it about thirty minutes before we sat down. Thought it would wilt everything. It didn’t. The avocado ranch stayed creamy, no browning, and my friend who eats like a rabbit asked what the dressing was because it didn’t taste like anything from a bottle. That was my ‘I made it from scratch’ moment. Not something I expected, as a not-very-adventurous cook.

Annie Lampella

Corinne, that sound is the whole test. The avocado keeps the dressing from going gray, so thirty minutes dressed is fine, even an hour if the lettuce goes in cold. Everyone asks that one.

Render the bacon low and slow if you want it to stay crispy when the dressing hits. Every other Cobb I’ve made, the bacon softens in two minutes and just disappears. Here it held. Recipe is more disciplined than most about keeping everything separate until you plate, and it actually changes how the textures work. Cherry tomatoes are doing more than they look like. The acid cuts right through the avocado ranch, makes the whole bowl click together. First Cobb I’ve made where the dressing connects everything instead of just pooling at the bottom. Making this all week.

Reply

Annie Lampella

The tomato thing took me forever to get right. I kept thinking they were just filler until I made a version without them. The whole dressing flavor flattens without that acid.

Something about the avocado gives the dressing a weight I wasn’t expecting, and I went in fully skeptical that a cold salad lunch would carry me through an afternoon. Four hours later, still not hungry. Making this twice a week until September.

57g of protein will do that. The avocado and bacon fat on top of it is a lot of staying power for something that looks like just a salad.

Reply

Chris

Quick-pickled the red onion (10 min in red wine vinegar) instead of raw, the sharpness mellows into something almost sweet and stops fighting the blue cheese.

Reply

Annie Lampella

Just one tablespoon brings that sweet-sharp shift against the blue cheese. The raw bite overpowers everything else in the bowl.

Reply

Chris

That explains it. I’ve been eyeballing it too, which is probably why mine is never consistent.

Reply

The avocado ranch is doing actual structural work here. It ties the blue cheese and bacon together so the bowl reads as one dish, not three separate toppings. Rarer than it should be.

Reply

Annie Lampella

I went through a few rounds with bottled ranch trying to figure out why the bowl wasn’t clicking. The avocado fat is what carries the blue cheese through every bite, not just the dressing flavor sitting on top.

Reply

Beth

My son has picked blue cheese off everything for a decade. He finished this bowl without touching a single crumble.

Reply

Annie Lampella

Ten years of blue cheese avoidance and avocado ranch is what broke the streak. Something about that creaminess just kills the sharpness.

Three weeks into keto and lunches were stressing me out. Had no idea what to eat besides scrambled eggs. Hot day, leftover chicken in the fridge, oven staying off. That avocado ranch is way better than it should be. I burned through half the leftovers just dipping cucumber slices into it. One bite of the actual salad and I finally got it.

Reply

Annie Lampella

The cucumber dipping should be in the recipe. Three weeks in and you’re already past the scrambled egg lunch panic.

My husband is not a salad person. He’ll eat one if it’s in front of him but he’s never once asked for one. I was putting this together Saturday afternoon, too hot to turn the oven on, and he came in and asked me to make him one too. I scaled his with extra blue cheese and used leftover rotisserie chicken from the night before. The avocado ranch was what got him, he kept asking what was in it because he said it didn’t taste like something off a diet plan. I knocked off a star because the blue cheese hits pretty strong for my taste, but I’ll keep making this through the summer. Might try feta next time and see if that works better for me.

Reply

Annie Lampella

Feta works well here, less sharp but still gives you that salty-creamy thing. And ‘doesn’t taste like something off a diet plan’ is basically what I was going for with that dressing.

Reply

Fatima

Swapped in feta because I was out of blue cheese and honestly? It’s better. Still creamy but a little brighter. I’ve made this every day this week and I’m not going back.

Reply

Annie Lampella

The brightness against the avocado ranch actually makes more sense.

First time making a Cobb salad at home (I always figured the deli version was close enough) and I’m genuinely surprised by how much better this is. The avocado ranch is where it got me, I kept adding more to every bite instead of just tossing it all at once. Quick question though: would feta work as a swap for the blue cheese? I want to make this again for my sister but she has strong feelings about blue cheese and I don’t want to lose that creamy element.

Reply

Annie Lampella

Feta works. It’s saltier and a lot less pungent, and since the avocado ranch is what’s really making this creamy, your sister won’t feel like she’s missing out.
