Keto Chicken Sandwich

These keto chicken sandwiches are my low carb answer to those fast food cravings, with a juicy chicken patty coated in crispy pork rind breading and topped with a creamy spicy pickle ranch. They’re easy to make at home and, dare I say, even better than the drive-thru version.

I’ve made plenty of keto chicken sandwiches over the years, but when I saw someone on Instagram make several chicken sandwiches using one giant chicken patty, I knew I had to try it. Instead of shaping, breading and flipping a bunch of individual patties, you press the ground chicken into one large rectangle, bread the whole thing and bake it all at once. After testing it myself, I definitely found this method easier, especially when you’re making sandwiches for the whole family. Once the chicken is crispy and golden, just place it over your buns and slice it into individual sandwiches.

For the breading, I use a combination of almond flour and pork panko to keep the chicken low carb while still giving it that crispy coating you expect from a fried chicken sandwich. Spraying the breading generously with avocado oil before baking helps it brown and crisp without having to deal with a pot of hot frying oil. I also make the chicken patty slightly larger than the layout of my buns because the ground chicken will shrink a little as it cooks. That way, you still get chicken all the way to the edges after baking.

And you definitely don’t want to skip the spicy pickle ranch. I make it with Greek yogurt, pickle juice, chopped pickles, dill and a little hot sauce, so it’s creamy, tangy and has just enough heat.

I actually like to make the sauce first and let it sit in the refrigerator while the chicken cooks because the flavors get even better as it sits. Add some extra pickles and shredded iceberg lettuce, and you have a crispy keto chicken sandwich that satisfies that fast food craving without having to hit the drive-thru.

Storage information

Store leftover chicken cutlets separately from the buns, sauce and toppings so the breading stays as crisp as possible. Keep the cooked chicken in an airtight container in the refrigerator for up to 3–4 days. Store the spicy pickle ranch separately in a covered container in the refrigerator.

To reheat in the air fryer: This is my preferred method because it helps crisp the pork rind coating back up. Air fry the chicken at 375°F for 3–5 minutes, or until heated through and crispy. If reheating a thicker or larger piece, it may need another minute or two.

Once hot, assemble the sandwich with a fresh bun, spicy pickle ranch, pickles and iceberg lettuce. Avoid reheating the sandwich fully assembled, since the sauce and toppings will make the breading soggy.

Step by Step Instructions

  1. Preheat oven & season the chicken

    Preheat oven to 375°F. In a bowl, combine ground chicken, salt, garlic powder and onion powder. Mix just until combined.

    For this step

    • 1 lb ground chicken
    • 1 teaspoon salt
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder

  2. Shape the giant chicken patty

    Place a sheet of parchment paper on your work surface and dust with 1/4 cup almond flour. Press the ground chicken into a thin rectangle approximately the size of four hamburger buns arranged together. Make the chicken about 1/4-inch larger than the buns to allow for shrinkage as it cooks.

  3. Bread the first side

    Lightly dust the top of the chicken with some of the remaining almond flour. Brush with beaten egg, then coat generously with half of the pork panko, gently pressing the crumbs into the chicken so they adhere. Spray generously with avocado oil until the breading is coated.

  4. Flip and bread

    Place another piece of parchment paper over the chicken and carefully flip the entire patty. Remove the top parchment and repeat with the remaining egg wash, pork panko and avocado oil.

  5. Bake

    Keeping the bottom parchment paper, transfer the giant chicken patty to the prepared sheet pan. Bake on the middle rack of the oven for 15 minutes. Turn the oven to broil. Move the rack and chicken to the top rack and broil on high for an additional 3–5 minutes, or until the breading is golden brown and crispy. Watch closely since broilers vary significantly in strength.

  6. Make spicy pickle ranch

    In a medium bowl, combine Greek yogurt, pickle juice, hot sauce, chopped pickles, dried dill, garlic powder, onion powder and salt. Refrigerate while the chicken cooks.

    For this step

    • 3/4 cup plain Greek yogurt
    • 1/4 cup pickle juice
    • 1 tablespoon hot sauce, or to taste
    • 1/3 cup finely chopped pickles
    • 1/2 teaspoon dried dill
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • salt, to taste

  7. Assemble

    Arrange four bottom buns together and spread with spicy pickle ranch. Place the giant chicken cutlet over the buns. Top with additional sauce, pickle slices and shredded iceberg lettuce. Add the top buns, then slice between each bun to divide the giant chicken cutlet into four individual keto chicken sandwiches.

Frequently Asked Questions

Can I make the chicken patties individually instead of one giant patty?

Absolutely. You can divide the ground chicken into individual patties and bread each one separately. I prefer making one giant chicken patty because it’s much faster and easier. Once it’s cooked, I just place it over the buns and cut it into individual sandwiches.

Why do you use pork panko for the breading?

Pork panko is made from crushed pork rinds and gives the chicken that crispy, crunchy coating without adding traditional breadcrumbs. It’s one of my favorite ways to bread chicken when I want to keep a recipe low carb.

Can I use an air fryer instead of the oven?

Yes, as long as your air fryer is large enough to hold the chicken patty without folding or overlapping it. You may need to make two smaller patties depending on the size of your air fryer basket.

Can I substitute ground turkey for ground chicken?

Yes. Ground turkey will work, although the flavor and texture will be slightly different. Look for ground turkey with some fat rather than an extremely lean variety to help keep the sandwich juicy.

What keto buns should I use?

Use your favorite store-bought keto hamburger buns or homemade low carb buns. Since brands vary quite a bit in carbs, texture and ingredients, choose one that fits how you personally track carbs.
