Yes — zucchini is keto. A cup has about 2g net carbs, which makes it the closest thing keto has to pasta. The only catch is the water, and managing it is the difference between zucchini that works and a soggy mess on your plate.

At about 2g net carbs a cup, zucchini is one of the few vegetables you can eat in real volume on keto without watching the number. A whole medium one is still only around 4g net, so it’s the rare low-carb veg you don’t have to ration.

The water problem (and the fix)

Here’s what trips people up: zucchini is more than 90% water, and that water has to go somewhere. Skip this step and your zoodles sit in a puddle and your lasagna turns to soup. The fix is simple but not optional: slice or spiralize it, salt it, and let it sit 10 to 15 minutes, then squeeze the liquid out in a clean towel before it goes anywhere near a hot pan. I’ve made watery, sad versions of every zucchini dish there is, and every single time it came down to skipping the salt-and-squeeze.

How I use zucchini on keto

Three swaps earn it a permanent spot in my fridge: spiralized into zoodles for any pasta dish, sliced thin into planks for lasagna in place of noodles, and grated into keto zucchini bread (where, conveniently, you want some of that moisture). It also fries well into keto “fries” and chips once you’ve pulled the water out.
