This easy keto chili recipe is one of the best keto meals you will have. The chili recipe calls for a few simple ingredients but it packs loads of flavor and does not have any beans. Plus, this low carb chili can be made up in an instant pot and ready on your dinner table in 15 minutes! Don’t worry...it’s okay if you don’t have an instant pot, you can make this keto chili in a slow cooker or stove top.

How do you make easy keto chili?

Keto chili, like traditional chili can be made in a large number of ways and variations (see my keto white chicken chili as an example), for this recipe, we focusing on making it EASY! Add some keto cornbread and you have an amazing meal!

Slow Cooker is the easiest

Yes, you can cook this keto chili in a slow cooker and it is the easiest, as you add  your ingredients and lets the slow cooker go to work. However it takes the longest!

Add all the ingredients in the slow cooker, cover and turn on. Cook it on low setting for 7 to 8 hours or high setting for 5 to 6 hours.

Instant Pot is the fastest!

The instant pot cook time takes a little over 15 minutes but has more steps then the slower cooker.

The instant pot recipe for chili has 2 major parts:

  1. Browning of the beef and sautéing of the vegetables
  2. Pressuring cooking

Stove top is hardest

To make this chili on the stove top, brown the ground beef with 1 tablespoon of oil in a stock pot over medium high heat until cooked through.

Once cooked and no longer pink, remove ground beef and add in remaining oil, onion and bell pepper. Sauté for a couple of minutes then add in garlic, jalapeno and seasonings. Sauté for another minute.

Add in diced tomatoes. Bring to boil, then reduce heat to low. Simmer for at least 30 minutes. The longer the keto chili simmers, the better it will taste.

  • 3 tablespoons avocado oil
  • 1 pound of ground beef
  • 1.5 teaspoons salt
  • ¼ onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeded & diced
  • 3 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 (13.5 oz) can diced tomatoes

  • Can you freeze already cooked chili?

    Yes, cooked chili if freezer safe for 3 to 6 months.

    To prepare from frozen you have a few options.

    Before utilizing any of the options below, let chili thaw out enough to detach from Ziploc bag or place the chili (still in the Ziploc) under hot water to speed up the process.

    Stove top

    Add the frozen chili to a large pot and reheat on low until chili reaches a desired temp, stirring from time to time.

    Slow cooker (crock pot)

    Similar to the stove top, add the chili and put the slow cooker on low.

    Microwave

    Pour into a larger microwave safe bowl and cover. Cook on high for 3 minutes. Check and stir the chili, recover again and cook again for a minute. Do this until the chili reaches the desired temp.

    What variations can I add to the low carb chili recipe?

    Different meats

    Try using chicken, Italian sausage, bacon, steak or game meats (like venison or elk) instead of ground beef

    Vegetables

    Really, any keto approved vegetable is safe here: peppers, onions, green onion,

    Flavor Enhancers

    Try adding items like dark chocolate, coffee, cayenne pepper, wasabi, anchovy, tomato paste, or wine to enhance the flavor of your keto chili.

    Toppings

    The sky is the limit: shredded cheese, bacon, keto crackers, onions,  or use the chili as a topping on keto hot dogs.

    How to thicken Instant Pot keto chili?

    This keto chili recipe is fairly thick as is, however if you are looking for a thicker chili, we can add 1/2 - 1 teaspoon of arrowroot powder in Step 5 (when you add the diced tomatoes).

    How many carbs are in a bowl of chili?

    It really depends on the chili recipe, but you would be hard pressed to find a descent serving size that has net carbs below 20gs. The good news is, this keto low carb chili has just over 7g net carbs!

    Can I use chuck roast or stew meat instead of ground beef?

    Yes, but please find a recipe for cooking chuck roast in an Instant Pot. You will also need to recalculate the chili macros, however they will likely ending up being similar.

    How long will keto chili last in the fridge?

    I wouldn't keep the chili longer than 3 or 4 days. If you need more time, please find my instructions for freezing chili.

      1. It shouldn’t be dry. I’ve made it several times as have others. Are you draining your tomatoes? You shouldn’t. If you want it more liquidy, you can add broth or water.

    1. This is such a wonderful recipe. I added a little beef broth I had leftover in the freezer and just a dab of tomato sauce. It is freezing cold here in northern Idaho and everyone loved it. Family is here and I didn’t tell them it was keto.

    2. I have tried a lot of different keto chilis and many are good, but this recipe is easy it takes the cake!

    3. We made this with shredded beef left over from last nights dinner, but still included some ground beef. The mix was great! To top it off, I crumbled bacon on top with sour cream. There is more good news, I have enough for lunch tomorrow. 🙂
