Keto Chili

Don't skip this one - my family's favorite chili recipe, and it's ready in 15 minutes with the Instant Pot!

This keto chili is one of my go-to dinners - a few simple ingredients, tons of flavor, and no beans. I make it in the Instant Pot and have it on the table in 15 minutes. No Instant Pot? It works just as well in a slow cooker or on the stove top.
How to make this chili three different ways
Chili is one of those recipes with a million variations (like my white chicken chili), but this keto chili is all about keeping it simple. Pair it with cornbread and you’ve got a full meal.
Slow cooker (easiest)
Dump everything in, set it, and walk away. It takes the longest but requires zero effort.
Add all the ingredients in the slow cooker, cover and turn on. Cook it on low setting for 7 to 8 hours or high setting for 5 to 6 hours.
Instant Pot (fastest)
About 15 minutes total, but a few more steps than the slow cooker. You’ll brown the beef and sauté the vegetables first, then pressure cook.

Stove top (most hands-on)

Brown the ground beef with 1 tablespoon of oil in a stock pot over medium-high heat. Once cooked through, remove the beef and sauté the onion and bell pepper in the remaining oil for a couple of minutes. Add garlic, jalapeno, and seasonings for another minute.
Add diced tomatoes, bring to a boil, then reduce to low and simmer at least 30 minutes. The longer it simmers, the better it tastes.

Ingredients
3 tablespoons avocado oil
1 pound of ground beef
1.5 teaspoons salt
¼ onion, diced
1 red bell pepper, diced
1 jalapeno, seeded & diced
3 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon oregano
1 (13.5 oz) can diced tomatoes

Add ingredients
Add oil, beef, onion, bell pepper, jalapeno, garlic, and salt to the pot

Add chili seasoning
Stir in seasonings and cook for 1 minute.
- Chili powder
- Cumin
- Oregano
Pressure cook
Cover and pressure cook for 8 minutes.

How do you do it in the crock pot?
Just dump in all of the ingredients to the slow cooker and cook on low for around 6 hours.
We made this with shredded beef left over from last nights dinner, but still included some ground beef. The mix was great! To top it off, I crumbled bacon on top with sour cream. There is more good news, I have enough for lunch tomorrow. :)

This is such a wonderful recipe. I added a little beef broth I had leftover in the freezer and just a dab of tomato sauce. It is freezing cold here in northern Idaho and everyone loved it. Family is here and I didn't tell them it was keto.

What am I supposed to use for my liquid…. It’s awful dry for chilli
It shouldn't be dry. I've made it several times as have others. Are you draining your tomatoes? You shouldn't. If you want it more liquidy, you can add broth or water.
