Don't skip this one - my family's favorite chili recipe, and it's ready in 15 minutes with the Instant Pot!

This keto chili is one of my go-to dinners - a few simple ingredients, tons of flavor, and no beans. I make it in the Instant Pot and have it on the table in 15 minutes. No Instant Pot? It works just as well in a slow cooker or on the stove top.

How to make this chili three different ways

Chili is one of those recipes with a million variations (like my white chicken chili), but this keto chili is all about keeping it simple. Pair it with cornbread and you’ve got a full meal.

Slow cooker (easiest)

Dump everything in, set it, and walk away. It takes the longest but requires zero effort.

Add all the ingredients in the slow cooker, cover and turn on. Cook it on low setting for 7 to 8 hours or high setting for 5 to 6 hours.

Instant Pot (fastest)

About 15 minutes total, but a few more steps than the slow cooker. You’ll brown the beef and sauté the vegetables first, then pressure cook.

Stove top (most hands-on)

Brown the ground beef with 1 tablespoon of oil in a stock pot over medium-high heat. Once cooked through, remove the beef and sauté the onion and bell pepper in the remaining oil for a couple of minutes. Add garlic, jalapeno, and seasonings for another minute.

Add diced tomatoes, bring to a boil, then reduce to low and simmer at least 30 minutes. The longer it simmers, the better it tastes.

Ingredients

  • 3 tablespoons avocado oil
  • 1 pound of ground beef
  • 1.5 teaspoons salt
  • ¼ onion, diced
  • 1 red bell pepper, diced
  • 1 jalapeno, seeded & diced
  • 3 garlic cloves, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 (13.5 oz) can diced tomatoes

Select sauté function

Set the instant pot to the sauté function.

Add oil, beef, onion, bell pepper, jalapeno, garlic, and salt to the pot

Brown ground beef

Cook on sauté function until beef is browned and vegetables are softened.

Add chili seasoning

Stir in seasonings and cook for 1 minute.

Add tomatoes

Add tomatoes and stir to combine.

Pressure cook

Cover and pressure cook for 8 minutes.

Tip If cooking from frozen, dump all frozen ingredients into the Instant Pot with 1 cup of water. Pressure cook high for 15 minutes.

Vent

Let pressure release naturally before venting out excess steam.

Serve

Remove the lid and serve. Optionally, top with cheddar cheese.

Can you freeze already cooked chili?

Yes, cooked chili is freezer safe for 3 to 6 months.

To prepare from frozen you have a few options.

Before trying any of these, let the chili thaw out enough to detach from the Ziploc bag, or place it (still in the Ziploc) under hot water to speed things up.

Add the frozen chili to a large pot and reheat on low until heated through, stirring from time to time.

Slow cooker (crock pot)

Same idea – add the chili and put the slow cooker on low.

Microwave

Pour into a large microwave safe bowl and cover. Cook on high for 3 minutes. Stir, cover, and cook for another minute. Repeat until heated through.

Try adding items like dark chocolate, coffee, cayenne pepper, wasabi, anchovy, tomato paste, or wine to enhance the flavor of your keto chili.

Toppings

The sky is the limit: shredded cheese, bacon, keto crackers, onions,  or use the chili as a topping on keto hot dogs.

Frequently Asked Questions

How to thicken Instant Pot keto chili?

This chili is fairly thick as-is. If you want it even thicker, stir in 1/2 to 1 teaspoon of arrowroot powder when you add the diced tomatoes (Step 5).

How many carbs are in a bowl of chili?

It depends on the recipe, but most chili recipes land above 20g net carbs per serving. This low-carb chili has just over 7g net carbs.

Can I use chuck roast or stew meat instead of ground beef?

Yes! Just follow an Instant Pot chuck roast cook time since the cut is thicker. The macros will be similar but recalculate to be safe.

How long will keto chili last in the fridge?

    This is such a wonderful recipe. I added a little beef broth I had leftover in the freezer and just a dab of tomato sauce. It is freezing cold here in northern Idaho and everyone loved it. Family is here and I didn't tell them it was keto.

    What am I supposed to use for my liquid…. It’s awful dry for chilli

      It shouldn't be dry. I've made it several times as have others. Are you draining your tomatoes? You shouldn't. If you want it more liquidy, you can add broth or water.
