Without using all-purpose flour, bread flour and other gluten containing flours, low carb breads can be quite dense. The gluten proteins in the flours help to from that spongy, squishy, fluffy bread that we dream about.
Luckily, there are a few tricks that you can do to achieve a fluffy, spongy alternative that is gluten-free and tastes like bread.
