If you are looking for an easy keto breakfast that you can take with you on the go – to work or school, then this keto chaffle breakfast sandwich is your answer. Egg and sausage are sandwiched between two maple flavored chaffles resulting in a breakfast bite that is similar to a McGriddle sandwich! But instead, we will call this the Keto McGriddle instead!

 

Similar to other breakfast sandwich recipes, you can mix and match the sandwich ingredients too. Not a fan of sausage? Try bacon! Want some cheese in there? Sure, add some cheddar cheese or even pepper jack cheese for a sweet and spicy twist! This recipe is customizable to your keto taste buds!

What makes this the ultimate on-the-go keto breakfast is that you can meal prep these ahead of time and store in the freezer for later. Then when you are running late for school or work, wrap it in a paper towel and microwave for 90 seconds. You’ll be headed out that door in less than two minutes with a Keto McGriddle Sandwich in your hands.

How to make a Keto McGriddle

Unlike McDonalds, this keto breakfast sandwich will not use pancakes. Instead we are making maple flavored chaffles with just a few simple ingredients.

  1. Make the maple waffles by combining the egg, shredded mozzarella cheese, almond flour or coconut flour, sugar free maple syrup and baking powder.
  2. Cook waffles in the waffle maker until golden and crispy.
  3. Assemble the sandwich with breakfast sausage, fried and scrambled egg. Drizzle extra syrup on if desired!

Maple Chaffle Ingredients

  • 1 egg
  • 1/2 cup shredded mozzarella cheese

    What is a chaffle?

    A chaffle is a keto waffle that is made of up mostly egg and cheese. In this recipe, we use shredded mozzarella cheese since it has a mild flavor and it will make our “bread” extra crispy.

    Maple syrup is added to give the waffle that signature flavor found in a McGriddle breakfast sandwich.

    To make the maple waffle, you can use any waffle maker. My favorites are the mini waffle maker by Dash since it makes the perfect sized waffle. It makes the same size waffle as an Eggo waffle.

    My other favorite waffle iron is the Belgium waffle maker by Oster. This waffle maker has adjustable heat and can get really hot in order to crisp up the outside of the waffle. It is a larger waffle maker, but you can pour the entire batter mixture into the waffle iron. When it is done cooking, cut the waffle in half to get two sandwich halves for the breakfast sandwich.

    Ideal eggs for a breakfast sandwich

    Although some breakfast sandwich recipes use with bacon, sausage or ham, most will include an egg. It’s the basic source of protein for the portable breakfast option.

    There are many ways you can cook up an egg, from over-easy, to poached, to scrambled. It all depends on your preference and if you are the type that loves a running egg yolk for the waffle to soak up.

    If you are meal prepping lots of keto mcgriddles, I find it easiest to make fried eggs on the griddle or sheet pan eggs, which is basically scrambled eggs that you can cut into the perfect shape for your waffle sandwich.

    Besides eggs, there is a variety of meats, cheeses and spreads you can add to your breakfast chaffle sandwich. Here’s a few to consider:

    • Smoked sausage
    • Turkey bacon
    • Ham
    • American cheese
    • Pepper Jack cheese
    • Cheddar cheese
    • Cream cheese
    • Goat cheese
    • Fresh jam
    • Avocado

    Storage information & meal prep instructions

    It’s easy to make a bunch of keto breakfast sandwiches ahead of time and stored in the freezer to eat later! Prep your breakfast once and enjoy delicious breakfast McGriddles all week!

    To store in the freezer, assemble your sandwiches. Wrap individually in plastic wrap and store together in a freezer safe bag in the freezer.

    To reheat the keto Mcgriddles from frozen, unwrap the plastic wrap and wrap in a paper towel. Microwave on the defrost setting or at 30% for 2 minutes. Then microwave on high for 50 seconds or until heated through. If you want to crisp up the waffle, you can pop them in the toaster to get crispy.

    Can I make pancakes instead of waffles for this breakfast sandwich?

    Yes! Just pour the pancake batter on a non-stick griddle and cook until golden brown, then flip. Now you have a true keto McGriddle sandwich!

    My chaffle stuck to the waffle maker. What did I do wrong?

    Whenever a chaffle sticks to the waffle maker, it's most likely because you tried to open it too soon before it was ready to release. The batter hasn't finished cooking so it sticks to the waffle maker. Just close it and let it cook some more until the waffle can easily come out. Although not always necessary, you could spray the waffle iron plates with cooking spray before adding the waffle batter.

    Can I omit the syrup?

    The syrup adds that classic McDonald's McGriddle flavor, but you can omit it if you don't have any or just want a plain keto breakfast sandwich.
