Avocado Cucumber Salad

Ingredients

  • 1 cucumber, sliced
  • 2 avocados, diced
  • 1 tomato, diced
  • ½ red onion, diced
  • ¼ cup cilantro, chopped
  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon oregano
  • 1 teaspoon salt

Chop up the veg

Prepare your vegetables and fruit. Chop up avocado, dice onion, slice cucumber, rough chop the cilantro.

Unite them all

Add to a serving bowl.

Whisk dressing

Combine the ingredients for the dressing – olive oil, lemon juice, garlic, red pepper flakes, oregano and salt. Mix well.

Pour it on

Drizzle the dressing over the salad.

If that area under the stem is a brownish color, then it is overly ripe and the avocado will most likely be brown inside.

Avocado cucumber salad can be prepped ahead of time. The lemon in the dressing should help to keep the avocados from turning too brown.
