Almondine (or amandine) is the French term for almond garnish. This green beans almondine recipe adds simple enhancements like garlic, butter and dried thyme to complement the toasted almonds and fresh green beans.

The simplicity of this recipe can’t be understated. Instead of having to blanch the green beans in boiling water in the beginning, we cook them in the last step until slightly softened. With this method, you don’t have to worry about overcooking them. The result? Perfectly tender and flavorful green beans every time.

How to make green beans almondine

  1. Lightly toast the almonds by baking in the oven or in a skillet.
  2. Sauté green beans with oil, garlic and thyme.
  3. Steam green beans for 5 minutes.
  4. Stir in butter and toasted almonds. Top with fresh lemon juice or lemon zest.

Key ingredients & substitutions

  • Sliced almonds – For a pretty presentation, use sliced almonds. If you don’t have them, you can chop up regular almonds, which will taste the same but not have the same elegant visual effect. Slivered almond will work as a substitute.
  • Green beans – This recipe is written for fresh green beans, but you can use frozen or canned if needed.
  • Garlic – If you want a more subtle flavor, use shallots which taste like a mild combination of onions and garlic.
  • Olive oil – I prefer light olive oil, but you can also use another light tasting oil like avocado or canola.

Fresh vs Frozen or Canned Green Beans

For the best flavor, use fresh green beans; however, frozen green beans or even canned will work in a pinch.

For frozen green beans, add them frozen and only add 2 tablespoons of water. The excess moisture from the beans themselves will help them soften.

Canned green beans will work in a pinch, but I wouldn’t’ recommend them as the texture will be completely different and the result may be more salty. If using canned green beans, you can skip the water all together since they are already softened.

    How to toast almonds

Toasted almonds have an extra special nuttiness to them that raw nuts just don’t bring to the table.

    Toast almonds in the oven:

    • Preheat the oven to 350 degrees F.
    • Spread the almonds out on a rimmed baking sheet so that they’re in a single layer.
    • Bake the almonds for 5 to 6 minutes, shaking the pan or stirring the almonds halfway through.

Toast almonds over the stove top:

    • Preheat a skillet to medium heat.
    • Add sliced almonds. Let cook until you smell a nutty aroma.
    • Toss the nuts and continue cooking until golden brown.

Be extra careful to watch the almonds in their last 1-2 minutes of baking. Nuts can go from toasted to burned very quickly.

    Possible variations

While this classic recipe is delicious as is, here are some fun ways to dress it up for a whole new (but still simple) green bean side dish:

    • Add crumbled bacon
    • Sauté with mushrooms
    • Top with parmesan cheese
    • Finish with a squirt of lemon juice or lemon zest
    • Instead of garlic, use fresh shallot
